Cooking 5K Chicken Dinners for St. Joes

This Saturday August 10th, is the 164th annual St. Joseph’s Picnic.  While the “Picnic with a Purpose” festivities draw 60,000 people, it is actually a capital campaign push for more residential cottages at St. Joseph’s with revenue benefiting  the kids and the agency.  Resident Chef of St. Joe’s, Finbar Kinsella, has a busy week on his hands ordering and prepping for the 5,000-6,000 chicken dinners being served that day.

A typical workweek for Finbar, (his name meaning “fair hair” in Ireland), is working Monday through Friday with child development at St. Joe’s serving up breakfast, lunch, and afternoon snacks for 100 kids, as well as serving 40 residential kids 7 days a week.  But when it comes to the big picnic he goes into prep mode.  Finbar credits a lot of dedicated people working many hours, a couple hundred volunteers, and local culinary students for pulling off the feat.  The goal is to have 5,000 chicken dinners ready for the crowd, with a contingency plan to have more if the weather is good.  The chicken dinner has become a picnic tradition, served with green beans, red potatoes, coleslaw, a summer salad, and Milo’s ice tea and lemonade for $9 per person.  Last year the chicken platters sold out.

This Saturday Chef Finbar’s team will start serving at noon, managing 11 huge chicken fryers in the grounds with 4-5 fryers going at once and the rest getting the oil back up to temperature for the next batch.   Weisenberger Mills has donated all the seasoned flour.  Chef Finbar tries to source locally as much as possible for the big event with the cucumbers and tomatoes coming from Kentucky Proud and local farms in Indiana.  That day the Lady of Lourdes are also serving up hot dogs, fried fish, bratwursts, steak sandwiches, pork-chop sandwiches and french fries.

If you are attending the picnic this year, Green Bean Delivery is adding a special bonus for those who donate $5.  For every $5 donation they are giving St. Joe’s two pounds of  fruits and vegetables for the children.  See you this Saturday at this amazing event!
